Mini Cheese Cakes

Olch
1 box vanilla wafers
Filling
2lb cream cheese
4 eggs
11/2 cups sugar
1 tbsp vanilla
Process all filling ingredients in processor until blended and creamy
About 30 sec
Line regular 24 muffin tins w paper cupcake liners
Place one vanilla wafer in each liner
Divide the filling between the muffin tins
Bake at 375 about 10 min; Cool
Top w pie filling or thick jam
Freezes well
